Satisfy an Appetite with These Tasty Cyprus Recipes

Well, we�ve put together some popular recipes so you can remind yourself of your last Cyprus Holiday. Or maybe you�re going out there for your first time?
Some of these dishes we�ve personally sampled in Cyprus and come recommended. And some of them�well we hope to taste soon in our next trip out to Cyprus.
Anyway, these are great if you want to whip up something different for your other half or your family. And if you are planning to go out to Cyprus some time soon and want to know more about Cypriot food, then you should definitely try out these out.
Weighing scales aren�t allowed here since we want to do things the Cypriot way. Everything is pretty much measured by the glass in Cypriot cooking. We�ll say 1 glass = 200ml or 7 fl. Oz.
Filletaggia Hirina Sti Skhara - Pork Fillets on Charcoal
The Cypriots can�t get enough of their pork dishes, so thought this would be a good one to start with. It�s fairly simple to prepare, to get you in the swing of things. Ideally if it�s summer, you can pop the pork fillets on the barbeque for that authentic taste. However, as I�m making these during winter from home, I�m going to make do with the old fashioned grill.
Ingredients
- 4 Fillets of Pork
- 1 and a 1/2 Juicy Lemons
- 1/2 Glass of Olive Oil
- Fresh Herbs � Thyme, Rosemary, Rigani (Marjoram)
- Freshly Ground Black Pepper and Salt
Preparation (Serves 4)
- Prepare your marinade by grinding the herbs with your mortar and pestle and season with a little salt and pepper. Now start to smell the amazing flavours. Next, squeeze the juice from the lemons and add the olive oil. Really give the mixture a good bashing and bruising.
- Pour the marinade over the pork fillets in a shallow dish and leave to marinate for 2 hours. Leave longer if possible, turning from time to time.
- Preheat the grill or light the barbeque so it�s nice and hot when you start cooking. Grill the pork fillets until they become crisp and brown all round.
- Serve the fillets straight from the grill and drizzle over some more marinade to moisten them. Serve with chunks of fresh lemon and a sprinkle of fresh herbs.
- Prepare yourself a side salad of iceberg lettuce and cucumber to complement this dish.
